Guilt free flapjacks

These chewy flapjacks are a tasty snack that have not been loaded with extra sugar and fat. The oats provide slow releasing carbohydrates that keep you going without causing a surge in blood sugar, and the sweetness comes from natural sugars in the apples & raisins. The apple skins have been left on because they contain pectin, a soluble form of fibre that is thought to lower cholesterol.



3 organic dessert apples

400ml 100% pressed organic apple juice

2 heaped teaspoons of cinnamon

2cm peice fresh ginger, grated

250g rolled oats

30g pumpkin seeds (or sunflower, or mixed)

160g raisins


To cook:

1. Slice and core the apple, leaving the skin on. Place the apples in a pan with the juice and bring to the boil. Reduce the heat and simmer , uncovered and stirring occasionally, for 25 to 30 minutes until the liquid is absorbed. Puree in a food processor or with a hand-held blender.
