Immune boosting butternut & shitake soup

This tasty soup is packed full of nutrients to support the immune system.

Ingredients (serves 4)

1 medium size butternut squash

1 large carrot

120g shitake mushrroms, sliced

1 tbsp coconut oil

2 big garlic cloves, chopped

2 inch piece of ginger, grated

1 red onion, chopped

1 red chilli, chopped (deseed if you prefer)

600ml of vegetable stock



To make:

  1. Peel and cut the butternut squash and carrot into bite size pieces
  2. Heat the coconut oil in a large pan on a medium heat, add the onion, garlic, chilli and ginger and heat gently for around 5 minutes, until the onion is softened
  3. Add the butternut squash, carrot and mushrooms, stir well
  4. Add the vegetable stock, bring to the boil and simmer for 15 minutes
  5. Blend in the pan with hand blender until smooth, or keep it a little chunky
  6. Season with salt and pepper before serving
